A unique manufacturing process for a DOCG red sparkling wine which represents excellence at a national level. Part of the harvest is transformed into wine through alcoholic maceration, while the remaining part is left to dry in naturally ventilated rooms. After 3 months, the raisin must is added to the September wine for a second fermentation. The process ends with the third fermentation, making the product sparkling with the long Charmat method.

As many as 3 fermentations are necessary, with 60% of the grapes being left to dry in rooms with natural ventilation for three months, before obtaining a bottle that enhances the primary aromas typical of the vine like few others.

All the grapes are left to dry for at least 2 months, maturing in barrique for almost 3 years. Petronio improves over time, reaching its maximum expression after at least two years of bottle refinement.
