After the harvest, the grapes are subjected to a delicate pressing and the must is then placed to ferment in oak barrels. Malolactic fermentation is avoided to maintain the natural acidity of the wine. The base wine is then bottled together with a mixture of yeasts and sugar (liqueur de tirage) to start the refermentation in the bottle. After an aging period of at least three years on the lees, the wine is drained to remove the dead yeasts and a small amount of sugar (liqueur d'expédition) is added to balance the acidity. The result is a high quality champagne, characterized by a straw yellow color with golden reflections, a fine and persistent perlage and an intense bouquet of ripe fruit, citrus fruits and notes of butter and bread crust. On the palate it is dry, elegant and well balanced, with good acidity and a long persistence. This champagne is perfect as an aperitif or as an accompaniment to fish dishes, shellfish and aged cheeses.
The Brut Blanc de Blancs Extra-Quality is wonderfully effervescent. On the nose it offers subtle toasted notes. All the creaminess of Chardonnay explodes on the palate, giving a refined finish. It goes wonderfully with fish or shellfish dishes.
Extra-Quality Dosage Zéro has a beautiful gold/green mousse. The nose is rich and the palate becomes more complex, revealing the minerality of this great champagne. The Chardonnay grape accentuates the vinous character of the wine, revealing a subtle acidity and a beautiful freshness to offer a wine with perfect balance.
The Vintage Extra-Brut 2009 has an elegant foam that reveals a beautiful golden color. The nose is ripe with citrus notes. On the palate it is full and reveals great intensity.
The color is a delicate golden yellow with golden highlights, which inspired the design of the bottle. The effervescence made of fine bubbles gives rise to a creamy foam. The first nose is powerful and richly aromatic, with notes of fresh pastries and dried fruit (apricot and grapes). If you give this Champagne time to open, the aromas of eucalyptol and fresh flowers will captivate you. The freshness perceived from the beginning, with a frank attack of lemon yellow, guarantees excellent linearity to this Champagne and a nice balance between liveliness and roundness.
The Rosé blend is expressive, delicately combining the expression of red fruit aromas, richness and length on the palate, whilst maintaining great liveliness.
The wine has a fine and persistent perlage, the nose is floral and fruity, fresh and savory in the mouth.

This Cuvée was obtained by selecting grapes from the high hills of the Valdobbiadene area, characterized by lean soil, a low yield of grapes per hectare and ideal sun exposure. The grapes treated in this way make an exceptional sparkling wine, particularly fragrant and characteristic, with a clean and pleasantly fruity aroma with hints of apple, wisteria flowers and a light scent of roses. The soft and harmonious taste makes it suitable as an aperitif, to accompany fish and cheese appetizers or throughout the meal with delicate dishes.
A unique manufacturing process for a DOCG red sparkling wine which represents excellence at a national level. Part of the harvest is transformed into wine through alcoholic maceration, while the remaining part is left to dry in naturally ventilated rooms. After 3 months, the raisin must is added to the September wine for a second fermentation. The process ends with the third fermentation, making the product sparkling with the long Charmat method.
A DOCG red sparkling wine that contains the essence of a unique method of its kind. As many as 3 fermentations are necessary, with 60% of the grapes being left to dry in rooms with natural ventilation for three months, before obtaining a bottle that enhances the primary aromas typical of the vine like few others.
